  • 1 Food Processor
  • 1 Spoon

Ingredients
  

  • 3 medium Eggplants (Aubergines)
  • 4 tbsp Olive Oil extra virgin
  • 1.5 tbsp Lemon Juice
  • 1/2 tsp Cumin
  • 1/2 tsp Salt
  • 1/2 tsp Black Pepper

Instructions
 

  • Preheat oven to 450F (230C)
  • Bake for 20 mins until charred. Allow to cool
  • Scoop out flesh with a spoon and add to food processor
  • Add lemon juice, olive oil, garlic, cumin salt and pepper
  • Process until smooth
  • Serve with pita bread or crudites
